Well, the leaves are officially off the trees now and it’s definitely feeling like winter is coming.
Can’t say that I am ready for winter, but I suppose I shall have to adapt soon! I took advantage of our gorgeous Fall season and went hiking as much as possible and got out in the sun a lot. It’s crazy how warm it can feel when the sun is out during the day, and then suddenly it is cold as heck as soon as the sun goes behind the clouds. I have definitely noticed that our days are getting shorter (and my puppy dog notices it too, and he is sleeping a lot more… amen!).
So, as the temps cool down, what better time to start eating more warming foods!
Well, do I have a tasty recipe for you today! I have so many random recipes that I have collected over the years, that I don’t even know where half of them came from anymore :/ (can you relate?!)
Today’s recipe is a vegetarian chilli, which is easy to make and full of delicious nutrient dense foods, which will support your health and immune system as the cold and flu season approaches! ?
Why this chilli recipe is great:
You can make a bunch:
Make a big crock pot of chilli and eat it during the week, or save some in the freezer for the near future!
It’s healthy:
Plenty of antioxidants, vitamins and mineral rich veggies – which help to keep our body nourished and energized. Folks need to eat a good amount of vegetables each day (most of us don’t get enough), so keep those veggies a comin!
Immune supporting:
The garlic in this chilli is immune system supporting and has natural anti-fungal properties to support your overall health!
Fibre:
The beans are rich in fibre and protein as well as minerals and vitamins. The high source of fibre will help to keep things moving smoothly ?
It’s fast and easy:
Prep ingredients and throw them in the crock pot!
I personally don’t really want to spend hours in the kitchen. I get it, most people are busy and have a lot on the go (but would like to eat healthy), so if we can make quick healthy and tasty meals I’d say that’s a win win ?

Keeping it realistic n’ holistic,
Vegetarian Chilli
- -2 tsp olive oil or coconut oil
- -2 medium onions chopped
- -2 cloves minced garlic
- -1 jalapeno pepper chopped
- -1 red pepper chopped
- -1 green pepper chopped
- -2 large tomatoes, diced
- -8 oz tomato sauce
- -14 oz canned diced tomatoes
- -2-15 oz red kidney beans
- -3 cups water
- -4 tbsp chilli powder
- -2 tbsp cumin
- -1 tbsp paprika
- -1 tbsp oregano
- -1 tbsp lemon juice
- -Sea salt and pepper to taste
- Saute onions, garlic and peppers in oil until onions are translucent.
- Add spices and simmer for 2 minutes.
- Stir in remaining ingredients.
- Add water if required.
- Simmer for 4 – 6 hours. Great for the slow cooker/crock pot!
- You can add lean ground meat to this chilli as well if you prefer!
